fried rice recipe

it can be adjusted to your liking in so many ways.


Ingredients:

approximately three (3) cups of day old rice  (rice should not be sticky)
three eggs, scrambled well
three carrots, diced
three stalks of celery, diced
one medium onion, diced
two stalks of green onions, chopped
salt
pepper
one packet of Kikoman Fried Rice seasoning packet, added to 2 tablespoons of water
soy sauce
olive oil

meat:  you can put anything into this.  i've used hot dogs, leftover ham, chicken, and salmon.  use about a cup of meat.  leftovers work great.

vegetables:  you can add more veggies if you want.  i suggest cabbage, broccoli, corn, green beans and you can use frozen if you can't get fresh.

in a large pot, deep enough to stir all ingredients, cook the carrots, celery, and the onions in a tablespoon of oil.  once onions are translucent and carrots/celery are just tender, add your meat.  toss for ten minutes over medium heat.  add seasoning mixture, one tablespoon of soy sauce, salt and pepper and continue to toss over medium heat.

once completely incorporated, gently toss in scrambled eggs.

if mixture seems dry, add a teaspoon of oil and combine.

remove from heat, cover and let mixture rest for 5 minutes and serve.



wireless has returned

okay, how addicted am i to my computer?  we were without wireless for a day or so that felt like a week and i was going through withdrawal.  that's sad but thankyousomuch jme for fixin' it!
